Spinach and Feta Turkey Burgers

Amount Measure Ingredient -- Preparation Method
For the patty mix:
1 1/2 pounds ground turkey
1 cup finely chopped mushroom
1/4 cup finely chopped onion
1/4 cup finely chopped green bell pepper
1/4 cup finely chopped raw bacon
1 tablespoon sea salt
1 teaspoon minced garlic
1 teaspoon soy sauce
1 teaspoon black pepper
For the topping:
2 cups chopped spinach
1 cup sliced onion
1 cup crumbled feta cheese
1 tablespoon bread crumbs
1 tablespoon olive oil
salt and pepper
1. Place the patty mix ingredients in bowl.
2. Knead until the meat reaches a gummy consistency.
3. Divided the meat into 4 portions.
4. Form patties about a half inch thick.
5. Cook on a char broiler or sauté pan for 6 minutes on each side.
For the topping:
1. Heat a skillet to high heat.
2. Add the onion and cook for one minute.
3. Add the spinach and cook until it wilts.
4. Turn off heat and stir in the bread crumbs.
5. Stir in the feta.
6. Season with salt and black pepper.
Place the turkey patty between your favorite bun and top with the spinach feta mix.
