Soft Shell Clams Marianne

Amount Measure Ingredient -- Preparation Method
2 dozen soft shell clams
2 tablespoons minced bacon
2 tablespoons shallot julienne
1 teaspoon minced garlic
1 cup dry white wine
1/2 cup heavy cream
1/2 cup chopped button mushrooms
2 tablespoons olive oil
salt and pepper
1. Heat a pan to medium-high heat.
2. Add the olive oil, bacon, garlic, shallot and mushrooms.
3. Cook until translucent.
4. Add the wine and bring to a simmer.
5. Add the cream and bring to a simmer.
6. Add the clams and cover.
7. Cook for 8 minutes until the clams open fully.
8. Enjoy hot.
